Ingredients
- 45ml (1.5 oz) 1244 gin
- 15ml (0.5 oz) lemon juice
- 15ml (0.5 oz) raspberry syrup
- Egg white or 20ml (0.7 oz) Aquafaba (chickpea brine)
- Coupe glass
- Raspberry dust and mint (for garnish)
Instructions
- Fill a cocktail shaker with ice cubes.
- Add 45ml (1.5 oz) of 1244 gin to the shaker.
- Pour in 15ml (0.5 oz) of lemon juice.
- Add 15ml (0.5 oz) of raspberry syrup to the shaker.
- Add the egg white or 20ml (0.7 oz) of Aquafaba to the shaker. This will give the cocktail a creamy texture and frothy top.
- Securely close the cocktail shaker.
- Begin with a “dry shake” by shaking the ingredients without ice for about 10-15 seconds. This helps emulsify the egg white or Aquafaba and creates a frothy texture.
- Open the shaker, add ice cubes, and shake again vigorously for another 10-15 seconds to chill the cocktail.
- Strain the cocktail into a coupe glass.
- Garnish the drink with a sprinkle of raspberry dust and a fresh mint leaf.
- Serve the Clover Club cocktail immediately and enjoy!
